This is a very easy dish
to make.. Yet it will taste
like nothing you have ever
had before.
Its very very good. Try it!!
Chipotles are smoked and dried
Jalapenos.
But they have a flavor all their
own, much milder and more intense
then Jalapenos.
You will need
1 Chicken cut up,, or whatever parts you like
1 can (smallest you can find) of Chipotles
1 cup of Cream (half and half)
a few cloves of garlic
Cook some chicken any way you like.
Pan Fry it, bake it, or even buy
it already cooked in the store
(I would suggest you not put
a breading or batter on it).
I just buy a whole Chicken in the
store, I have the butcher cut it
up in smaller pieces and then put
them in a pan and bake them for
2 hours at 300 F.
While the chicken is cooking take
a cup of cream; normal Mexican Cream
or half and half in the US.
Put this in the blender, add some
garlic, either garlic powder or
a few cloves of fresh garlic, then
add one or two Chipotles.
Do this by taste,,, 2 will be a wee
bit Piquino... If you are not into
spicy food try just one,,, You can
always add more.
Turn the blender on and liquefy everything.
Taste it? if it needs a bit more kick just
toss in another chili.
When the chicken is ready, put the cream
on the stove and gently warm it.
(DO NOT bring to a boil)
Put the chicken on a platter and pour the
cream over the top..
Serve..
